I have fallen in love with the Australian chef Donna Hay & the latest edition to her cookbook family – ‘Fast, Fresh & Simple’.
For people like myself who find it difficult to multitask & follow more than 4 easy steps to create a meal masterpiece then Donna is your dream cooking companion! She offers a new spin on old favorites, using a mixture of store bought & fresh ingredients & the best bit…she incorporates shortcuts (yay!) all whilst serving up fresh, flavorsome & practical dishes.
This boys & girls is what we had for dinner last night, fancy adding it to your repertoire?
Maple glazed Chicken
Ingredients: based on 2 people
2 x Chicken breast
¼ cup (60ml) maple syrup
¼ cup (60ml) water
Squeeze of half a lemon (my addition – I could have sworn I read it in the recipe!)
½ teaspoon Chilli flakes
½ teaspoon Sea salt
½ teaspoon Cracked pepper
2 small agria potatoes (or any floury variety)
3 cloves garlic thinly sliced
Small handful fresh herbs chopped (thyme, oregano or rosemary)
Pinch salt & pepper
Mix water, lemon juice, maple syrup (or honey), chilli flakes, salt & pepper in a bowl
Slice potatoes thinly (about 5mm thickness) and brush with oil (I use rice bran or grape seed)
Slice garlic thinly & roughly chop herbs
Pour mixture into non-stick fry pan & bring to a simmer.
Add chicken breast & cook 4 – 5 minutes each side on a low to medium heat (or until cooked through)
Heat a non stick fry pan and cook potatoes approx 3-4 minutes each side (or until soft & golden brown). Just before the potatoes are cooked add in garlic & herbs, toss around the pan with potato slices
Steam beans until al dente, I normally steam for 3-4 minutes.
Plate up & Serve!
Do remember to pour the remaining maple jus over the chicken. YUMMO 🙂
